EATS: Best Beet Yet

Last year my partner and I were making dinner in the kitchen listening to some tunes (drum n’ bass—his choice) when I looked up from my cutting board and said, “wow this is the best beet yet!”

He wholeheartedly agreed before he realized I was talking about the vegetable, and not his music.

Beets are a very underrated veggie, in my opinion. Not only do they add a punch of colour to absolutely everything (if you know, you know), they also have a number of health benefits.

Beets are high in antioxidants and anti-inflammatory agents which means they help prevent kidney and heart disease, cancer, and dementia. They can give you an energy boost and assist with endurance. Beets are also high in fiber, and you know what that means? They can help keep things moving regularly.


And since you’re here, YES, beets are great for your overall eye health and nerve tissues. The leafy part contains lutein, which is an antioxidant that helps protect your eyes from age-related macular degeneration and cataracts.

So how do you eat them? You can roast them, pickle them, juice them, or blend them into the best beet hummus you’ve ever had!

You can even cook the tops in butter and salt like you would Swiss chard.
